Hi, I’m Mimi and I love my body. You would think that someone who was, until recently, over 300lbs would have a difficult time saying that. But I do. I love my body. It is an amazing place to live.

That said, I don’t always LIKE my body. Who does? It has aches, it has rolls, it can be messy, and it can be weak. But for the most part, I do like it. And I think a lot of that love for my body comes from my system of self-care.

Mimi’s Menu: 9/24/17 – 9/29/17

Last week’s menu did pretty well, though it fell apart completely on Friday and we ended up hitting Wendy’s after a long day, and even longer week. But until then, we stuck to it and tried some new things.

We did try out cloud bread, and while it didn’t taste bad, it certainly didn’t have a bread texture and not much flavor either.

So this week, we’ll be returning to the Ultimate Keto Buns that we so enjoy. We’ll be using those in two meals this week, and I’ll be posting a recipe for our grilled ham and cheese later in the week. Continue reading

Weekend Weigh-in: 09/23/17

This week was one of those “the best laid plans of mice and men” weeks. It was a bit odd. There was an unusual amount of stress coming from work, though thankfully, we didn’t have little packs of M&M filled trail mix to snack on. We also made a switch from cable to a few streaming services this week, which resulted in a few nights of running around, getting inordinately angry at a cable modem, and more calls to the cable company than I would have liked. Thankfully the mister took care of those when I was ready to bite someone’s head off. Continue reading

What a Difference a Year Makes

Some days are just so much better than others. Occasionally, you have one of those days where everything goes wrong, and then there are days where things just seem to be going right. I’m pretty sure it has to do with the mood you are in when you leave the house.

As I finished getting ready for work this morning, I was having such a good hair day that I decided to take a picture. And then I thought maybe I should take a progress picture. After I took the picture, I looked back at some of my others and boy did my mood lift.

Recipe Review: Decontructed Pizza Casserole

This morning was unusual. I don’t have a ninja princess (my niece) to take to school this week, so my mornings have been a bit more relaxed. I still set my alarm for 6:30, but I get to hang out in the warm covers for a half hour and scroll Facebook. And then even if I take a full hour to get ready for work, I’ve got another full hour to just…do whatever.

So I took that extra time this morning to get a head start on tonight’s dinner. We’re having Low-Carb Deconstructed Pizza Casserole from over at Kalyn’s Kitchen.

Prep took me approximately 20 minutes, but that’s mostly because I was being slow. If I’d been in a hurry, I could have had it done in 15. The biggest time saver is to drain, rinse and pat the tomatoes dry while the sausage is browning.  Continue reading

Mimi’s Menu: 9/17/17 – 9/22/17

Happy Sunday afternoon! I got a bit of a late start this morning. I just didn’t want to get out of bed. Sunday’s tend to be that way for me. Ever since I switched from a four-day weekend to a two-day weekend, my Sundays are precious.

I didn’t take the time yesterday to scope out recipes for our new weekly menu, so we are going to have a few recipes that we’ve tried before. However, I have not yet reviewed them, so expect a few reviews this week!

I’m going to try my hand at making cloud bread, and we have a delicious looking deconstructed pizza dish for mid-week. Of course, we’ll be having our Nathan’s and chili for tonight’s supper, but that’s pretty common for us on Sunday.

Why do we have hotdogs every Sunday? Well, if you ever try Nathan’s hotdogs, you’ll understand. And since we don’t eat bread on a regular basis anymore, a dish of sliced up hotdogs smothered in no-bean chili and melted cheese is a quick, low-stress meal that is both filling and delicious.

We are eating out twice, but I’m pretty happy with cooking 4 out of 6 nights that we cover with our menu. Dickie’s BBQ is another meal that often ends up on our menu, and that’s because it is really simple for us to get a lot of meat and a choice of sides that won’t kill our macros. I generally opt for the two meat plate with chicken and polish sausage, a serving of mashed potato casserole and a Caesar salad. Hubby usually picks up turkey and polish sausage with chips and a mac and cheese. We end up there at least once a week!

It’s really not about how much you eat out, but more about the choices you make when you do.

Weekend Weigh-in: 09/16/17

You ever have one of those weeks where everything seems to be going wrong? I had one of those this week. It wasn’t anything major, really, and most of it was probably due to my dear Aunt Flo heading this way, but I just felt off all week.

So I wasn’t exactly surprised when I stepped on the scale this week to a two pound gain. And of course, my scales didn’t agree, again. One said 2lbs, the other said it was just 1. But I know me, and I’m pretty sure it was the larger gain.
