Last week was the first time in a very long time that I cooked for more than two days. Despite the work that went into the Mexican lasagna, I felt quite accomplished that I managed to stick to the menu for the whole week.
There were definitely moments where I just wanted to say, “I’m too tired. Let’s go out.” But I wanted to show myself that I can do it. I can make a plan and stick to it, and enjoy the fruits of my labor. Having everything come out tasting good was a major bonus.
So, given last week’s success, I decided to try it again this week, including a try at two new recipes! Reviews will be coming as we give the stew and salmon a try. Bon Appetit!
Sunday: Nathan’s Hot dogs with chili and cheese.
Monday: Dickie’s Barbeque
Wednesday: Paleo Beef Stew
Thursday: Salmon Patties with Fresh Herbs
Friday: Meatballs in marinara with mozzarella cheese.
